Unconventional/Interesting vacation destinations

I'll be organizing a getaway for 12 of my classmates after we graduate from law school in 18 months (May 2009). We are all pretty heavily in debt but want to rent a villa or home for a week as this will likely be the last time we are together for any significant period of time before we are scattered all over the globe.

Basically we are looking for a destination that has warm weather, cheap food and booze, beach, and in interesting landscape for hiking. We aren't looking to hang out with a bunch of 19 year olds on a spring break type vacation, so Mexico and the Carribean is likely out of the question. Also, shopping is not at all an interest, so don't worry about making women and guys who like shopping feel welcome.

So far I've come up with two choices (1) Sorrento, Italy and (2) Sao Paulo, Brazil. Neither are particularly cheap, but Sorrento is coastal, Pompeii is within 45 minutes, and Capri is a short boat trip away

I'm not well travelled, so I'm open to any suggestions as long as they meet the above requirements. It doesn't have to be hiking, but we are all pretty outdoorsy guys, so rugged locations might be a selling point for us

Also is you could recommend any agencies that are trustworthy and have housing for rent it'd be much appreciated
