I use Intelligolf. It keeps track of all sorts of stats such as faiways hit, GIRs, penalty strokes, etc... and it has some nice stats and charts you can run. If you get the right version it is also GPS capable - although you often will have to map the courses yourself as the database is not very complete when it comes to GPS data.
