Lets talk gaps. Very important. Ok most PW are in the area of 48*. Now you HAD a 54* and maybe you got a 60* flop wedge. Pre bend you would have had an even 6* separation which is great for consistancy. But now if you turned it into a 51* then there is a close range between Mizuno and the PW. And now a major gap between Mizuno and flop. So if you hit the Pw 100 yards then the Mizuno will be about 90 and the lob will be like 50 yards. The old way you would have 100 yds, 75yds, and 50 yards. All have an even 25 yard gap. More dependable on yardage. As far as the bending 3* is fine, no damage especially with forged due to being a soft material.
My worry would be that when you changed the loft from 54 to 51, you also reduced the bounce angle by 3*'s. That could make the 51* wedge dig real bad. Did you think about this before you had it bent?

In response to the club being able to take the adjustment structurally, it's close. The recommended amount of adjustment is usually a max of 2*. However, if the clubs are forged, you can probably get away with 3*. However, I would not have it adjusted in either direction again.
In response to bounce, I would have to agree with OnePutt. As far as the spacing out of your wedges, that's a matter of preference.
How much bounce did it have to begin with? If it had 12 degrees for example, than it now has 9 and that's just fine. If it only had 6 degrees of bounce previously, now it has 3 and that might not be enough. Depends on your swing though. Some people can hit a club with just 3 degrees of bounce just fine. I bet the amount bounce is still fine since most 54 degree wedges have 12 or more degrees of bounce.
