Stableford scoring help needed

I am running a Golf day tomorrow, the morning being a 10 hole Team stableford event.
Most teams are 4 balls, but I have a coupel of 3 ball groups.
The scoring was going to be as follows...
Holes 1-3 - 1 score counts
Holes 4-6 - 2 scores count
Holes 7-10 - 3 scores count.

However, for a 3 ball team, they have no fallback, all their players will have to score on the last 4 holes, therefore they are disadvantaged.

I have heard of using "George", this is somesort of extra player who scores points based on the other players' scores

Can anyone tell me how George works ?
Or can anyone suggest another way to make the scoring fair for 3 ball groups ??
