go hit them both and try some other irons out and see what you like the best.
As he said. There is no best club. The best one is the one that lets you hit the best shots. Get out to a demo day and try the 2 or 3 models that have your interest. One will work better for you.
Also a proper fitting is \key. You will hit a poor club that fits you well better than a top of the line club that does not fit you!!!!
hit them its the only way to find which is the best for you. and i second the fitting also, most important.
but if its a popularity contest callaway all the way.

I was/am in the same boat as you. Looking towards new irons, and considered Callaway and TaylorMade.
So I live about 10 minutes away from a Golfsmith (which I take full advantage of) and use their hitting cage alot. I hit the the X-20's and they pretty much make golf REALLY simple. You hardly get a shot with those cavity backs that does not feel good. Hit R7 Draws, seemed like I hit these quite well. Chances are because it has a weight in the heel, making it really easy to basically, swing.
Went home, did some price homework on both. X-20's = $640, R7 Draws = $550
Came back next day for a fitting. Found out I'm standard across the board. Talked with the manager at Golfsmith who did my fitting, for at least 2 hours. What I basically got from him, was don't buy the Draws. Ok, so now I look to regular R7's. Hit those, and I basically could not hit them to save my life. Didn't really want to go with Callaway, because they just really, big. Started hitting some from the Mizuno line. Hit everything from the players blades, to their extreme game improvement line. I found something in between, that was the MX-25. Best deal I can get right now for those is $600.
This entire thing has been about a month in research, and I've talked to alot of guys about irons. If I were you, I would defiantly give Mizuno a look, as they offer clubs that match very well with the forgiveness of the X-20's, and the players cavity of the R7. The consensus is that Mizuno steel is of better quality compared to TaylorMade, but thats up to you to decide.
If you take nothing from me, just make sure you allow yourself as much time to try out clubs and do your homework before buying. Before the X-20's released, I was sure I wanted X-18's in graphite. Spent time hitting them, and realized it wasn't for me. 4 months ago, TaylorMade R7's were a thing of beauty. My teammate just got a set, and has been playing some of his best golf. I can't seem to hit them worth a **** over the past week. Been hitting the Mizuno MX-25 many a times now, and I think thats what I'm going to pull the trigger on tomorrow morning.

My MX-19 have turned my game almost completely around. I could not have asked for a better set of Irons. Unless they start making poo, I am a Mizuno Man for life.

I'm a die hard Taylormade player, but I'll probably put a set of Mizuno irons in my bag. They are top quality.
