In general, longer and lower lofted clubs get gradually harder to hit because A) The extra length makes the weapon harder to control and B) the lower loft creates less backspin. Backspin masks sidespin, so the sidespin more greatly effects shots hit with longer clubs.
In comparason, a 5-wood will have a higher MOI value due to the dimensions of the clubhead, making it more friendly to off-center hits. The 5-wood, however would be about 1" longer than a 2-hybrid, making it harder for some people to control. Also, with similar shafts, the 5-wood would have a slighly higher ball flight.
As far as distance, it's hard to say if you'd hit the 2-hybrid longer than a 5-wood, or significantly longer than a 3-hybrid for that matter. I think the best piece of advice I could give you is to find a pro shop that will loan you demo clubs or borrow clubs from a friend. Only by practical application will you find out for sure.
