When I fit people for putters in the past, I always showed people Anser-style putters first and then worked from there. When I say Anser-style, I am talking about a non-mallet, perimeter weighted blade style (of which there are hundreds of types). I'd usually see how they putted with a pipe-neck hosel with more offset and a shorter hosel. From there, I'd have the person putt for a while and then introduce a center-shafted model and see how they hit that, then try a mallet. Most people have a preference as to what they definately like or dislike, so that weeds out some options.
Fitting/selecting a putter is on the opposite end of the spectrum as fitting a driver. Fitting a driver is all about launch conditions and quantitative results (with a hint of personal preference), whereas fitting a putter is mostly about preference because people generally putt best with what they like.
Most golfers definately benefit from taking some demo putters with them because there are only so many scenarios you can simulate on a small artificial grass area. Plus, after hitting the same putt 20 times, most people roll all their putts in the cup anyway.
We never worked with a fitting system for loft, so we sold almost exclusively stock lofted putters, but we'd fit for lie and length.
