Good Iron Shots

I have been golfing for about 1 month now and I love the game, my wife and I are having a lot of fun. We both took one lesson and I think it has helped out a lot. Soon we will be going back for another lesson, but I was wondering something. We are hitting our iron shot OK, but not solid every time. How long does it take to develop the proper muscle memory to hit the shot good every time? I will hit behind the ball 2~3 time out of 10 on the driving range (not very good conditions, playing off of dirt and the ground is not level.)

I know that this is a difficult question because it depends so much on the individual, but I thought I would ask any ways.
