Divots should start in front of where the center of the ball used to be, by an inch or two. 'At center' isn't totally horrible, but it leaves no margin for error, and it increases the loft of the club (you want the ball to leave the clubface prior to digging in). This is more important for the shorter irons than for the longer irons, for which smaller or no divots are taken. For the shorter irons the ball should be further back in your stance (i.e. the hands are further in front of the ball), hence the bottom of the swing is further removed from the ball position, which is why you dig up divots with these clubs. 'Hit down on the ball' is a popular swing thought for this.
