Move the ball a little closer to you when you practice (1 to 2 inches start at one then keep moving and see if it helps).

When you hit a fairway wood you need to position the ball about two inches inside your left heel so you can sweep the ball off the turf. It's important to shift your weight to your right foot (for righties) by turning back with your left shoulder and arm. Then, as you unwind and transfer your weight to your leading foot on the forward swing, you've got to keep control of your left side as you hit through the ball. This will give you consistency.
Here's a drill that might help: Place a tee about six inches in front of your ball. When you swing, use the tee as a reference point as you swing the club through the ball. Try to hit the forward tee to give you the feel for the proper extension. Practice this, and you'll be hitting long, accurate shots with your fairway woods.
Another thing I would mention is to keep the same spine angle throughout the shot. If you're changing that, it can result in leaning into or pulling out of the shot.

I play the ball just forward of center, stand further from the ball than normal, and take a normal swing (which is BIG compared to most people I play with) and hit down on it taking a shallow divot. I know this isn't how you are supposed to hit them, but people are amazed at how long and consistent I can hit them off the deck. I also get a really high trajectory that doesn't balloon and lands softly.

I position the ball as any textbook states and swing the same as I would with an iron...the sweeping happens as the ball is farther away and forward as compared to a 7 iron...
