Whats your favourite to watch. mine has to be the Masters, Augusta has plenty of risk reward situation's, a lot of birdies, a lot of bogeys and every year a guaranteed BIG story.
The British Open without a doubt. I usually HATE getting up early in the morning. But you can bet your bottom dollar I'll be up early next week to catch all the action at the British Open. It's just the tradition of it being the oldest major. And they usually play on a links course which is a nice change of pace. The weather is usually a factor either wind or rain so a player has to be able to adapt his game to the conditions to win. Plus it's probably the most international of all the majors in terms of the number of countries represented.

Lets not forget the coverage!
Something like 10 hours or something. Yes, I get drunk watching the British, and there is sufficient time to do so!
The U.S. Open is not so much a golf tournament as much as it is a mental torture test. The course are basically set up to break a players mental ability to endure. You don't win a U.S. Open as much as you survive it. This year was like a demolition derby and Geoff Olgivy was basically the last man standing.
I voted for The Open. For me it is the most prestigious of the 4. I heard somewhere that Phil Mickleson has played Hoylake 84 times between The Masters and now.
My favourite Major is whichever one is being played next. As far as choosing them out of season, I'd probably go:
1 - Masters. The right mix of course difficulty with chances to score. Usually set up so that someone can make a run on Sunday. Consistently good leaderboard (limited invitational field almost guarantees this).
2 - the Open. The daddy of them all. History and courses that force players to try a different game.
3 - the US Open. I like watching the pros struggle, but not sure I share the USGA's philosophy about par.
4 - the PGA. Getting better as they choose tougher courses.
1. Masters
2. The Open Championship
3. The US Open....would be #2 if the USGA was not in charge. (I do not like the USGA's philosophy about par)
4. PGA Championship
I enjoy the Masters the most. True, it's fun to see the pros struggle as much as I do (okay, well not quite THAT much), but I want to see good golf and the US Open seems to pride itself on making the pros look ... not so good.
My order would probably be:
Masters
British Open
US Open
PGA Championship
